Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon yeast dissolved in 1/2 cup warm water
1 teaspoon sugar
1 teaspoon Kosher salt
3 tablespoons vegetable oil
1 cup finely chopped scallions
fine sea salt for sprinkling
Method:
1. Warm water to 140 degrees and add yeast and sugar to dissolve.
2. Stir until smooth and bubbly (about 3 min).
3. Add flour, 1 tsp salt and oil and kneed until smooth.
4. Cover with a damp towel for a couple hours until dough doubles in size.
5. Place dough on floured surface and roll into a thin disk.
6. Add scallions and roll over to work them into the dough.
7. Roll up the dough tightly and cut into ½” thick coins.
8. Roll each coin out thin and fry in 325-350 degree oil until golden brown on both sides.
9. Drain on wire rack and sprinkle with sea salt while still hot.
10. Serve with Peking duck or sautéed vegetables and Hoisin sauce.
