Charlie Schaffer

Charlie was raised in Jackson, Mississippi. He started cooking in high school and quickly fell in love with the craft. He continued cooking throughout college serving as an apprentice to Frank Brigtsen and Brigtsen’s in New Orleans and later as Sous Chef for Frank Lee at Slightly North of Broad in Charleston, SC and Scott Peacock at Atlanta’s Horseradish Grill. Charlie went on to work for the Buckhead Life Group as Sous Chef at several of its renowned restaurants

Enjoying the professional kitchen much more than the law and politics he studied in college, Charlie decided this must be his calling. With the desire to develop a greater foundation on which to build a career, he chose to attend the Culinary Institute of America.

After graduating, Charlie set out to train under only the best European chefs in the most prestigious restaurants. Over the next several years he did just that, honing his skills further with Alain Ducasse, Lidia Bastianich and Spain’s master: Pedro Subijana.

Kathleen Schaffer

kathleen schafferKathleen was raised in New Hope, PA, and began her cooking career at the age of 16 working for a renowned chef from Pisa, Italy. She continued to cook in restaurants in New York City while studying Art and 20th Century Art History at New York University.

She opened her first business, Food Fetish, in Newtown, PA. It was touted as the “Best Caterer” by the Philadelphia Enquirer and received many other accolades. She later worked as Executive Chef for top event catering companies in NYC: The Gold Club of Purchase in Purchase, NY and The Ottley’s Plantation Resort in St. Kitts, West Indies.

With a desire to make organic, hand-made food more accessible, Kathleen opened BOX, a NYC-based gourmet lunch delivery service providing meals for artists, galleries, designers, musicians & businesses including MTV, Martha Stewart, David Byrne, Charlie Rose, Saturday Night Live, Conan O’Brien and Matthew Marks Galler to name a few.
